Layered pumpkin pie
I am trying to locate a specific recipe from the Denver junior league cookbook: Colorado Cache
I actually own this cookbook, but having moved in August it must be buried in the boxes that occupy one entire bay of my garage - stacked to the ceiling! I have tried to search those that are easily accessible, but no luck...and Thanksgiving is NEXT week! If anyone has the recipe I would be so very grateful! It is absolutely the best I have every tasted!

I believe that it might be under cheesecakes...because there was the crust layer, a cheescake layer, a layer that may have been a whipped topping, and I know for a fact that it was pumpkin...

I still don't see it in my cookbook. I read through all of the desserts, even looking to see if there was a variation on one that included pumpkin. The Junior League of Denver has published five cookbooks. Are you sure it wasn't in Creme de Colorado? I don't have that one, unfortunately.

maybe my friend adapted one of their cheesecake recipes...if I can find my OLD address book I may try to track her down...haven't talked to her in over 10 years; we lost track...
oh well, guess that explains why I couldn't find any mention of it on the internet...

Found the recipe I have been so desperately searching for...and hope others will find it as incredible as I did!
Layered Pumpkin Cheesecake
crust:
1 1/2 C graham cracker crumbs
1/4 C sugar
1/2 C butter (melt)Mix. Bake @ 350 for 6-8 min
Fillling:
3 Pkgs softened cream cheese
1 C sugar1/4 C packed brown sugar
1 - 16 oz can pumpkin
2 eggs
2/3 C (5 oz) evaporated milk
2 Tbl. cornstarch
1 1/4 tspn. cinnamon
1/2 tspn. nutmegBake @ 350 for 55-60 min
topping:
1 C sour cream
1/4 C sugar
1 tspn. vanillaSpread on top . Bake 5 min more.
Let cool completely.
