I will also be preparing beans from Bean by Beanby Bean a cookbook

I just finished eating a bowl of eye of the goat heirloom beans by gourmet valley-1/2 bag
it included
1/2 can beer
salt , pepper
jalapeno pepper minced
onion diced, 3 garlic cloves
celery, parsley
1 tomato diced

I omitted beacon

water to cover-cook for 21/2 hours

The recipewas found on the bag-
nice texture stays firm -sweet flavor

question on soaking beans-why do u have to discard beans that float?

    Generally it's because those beans are most likely hollow, or sullied in some other way.
