I can't believe I'd never heard of this before:

    I've never seen it locally but that doesn't mean you can't get it here. We are ordering some for the holidays from Boccalone.

      I've had the Boccalone version, and it's great.

      Red Apron makes it occasionally, but not often enough to be reliable - http://redapronbutchery.com/

      It is great to snack on or add to sauces, etc...

        Spoke to Nathan today from Red Apron - He has some curing now and should have it at Dupont FM a week from tomorrow (11/18)
