Heating cooked leftovers
I'm doing a lot more make-extra-and-freeze cooking these days. When I use the frozen leftovers, should I thaw them in the refrigerator before heating them in the over or microwave? Or just start them frozen, like a store-bought frozen entree?
Either way works. If you think enough ahead to thaw in the fridge (the pros call it "tempering") it will take less time to reheat, but if you don't think about them until you want them, heating from frozen is fine--it just takes longer. For example, I heated a refrigerated chicken pie at 350 for about 30 minutes. If it had been frozen it would have probably taken an hour or more.
