Does anyone know where I can buy leaf lard in Montreal or surrounding areas? It is for the purpose of pie making.
Kate McDermott from the Art of the Pie recommends leaf lard. I am also wondering where you can you purchase it?
I don't bake and Mrs Porker is a tenderflake woman...Can u make your own? I oftentimes see leaf lard in its raw form; can you melt it down?
I also use tenderflake but am curious about the leaf lard.
Leaf Lard is "saindoux de panne", or just saindoux, or just "panne", depending on my sources (google :-) ).
IMO, It should be available at most good butcher shop.
(but I've never used it, so I never looked for it).
