Looking for a recipe for Spanish Espinacas Con Queso

My family and I spent a few weeks in Seville at the beginning of this year and ever since I have been asked to try and replicate the spinach with cheese dish served by several tapas bars there.

Unfortunately, even after some fairly extensive googling, I have not been able to find a recipe for this dish. Plenty for a mexican version which uses velveeta, but the closest I have got to the Spanish version we had was http://angieperles.blogspot.com.au/20... or http://www.directoalpaladar.com/recet... neither of which seem quite right (the cheese was more a sauce than just melted, but I don't remember it having cream in it).

If you know how to make this dish (or even know which cheese they would likely have used) I would very much appreciate hearing from you.

    I adore Seville! I have a cookbook I bought when I was there. I will look in the morning and see if I have a recipe for this. Zzzzz until then

      baked in ramekins with manchego cheese, pine nuts, garlic and maybe raisins in a bechamel?

        I found a recipe in the book I brought home with me from Spain that is for empanada de espinacas y queso. Is this what you are looking for? It is a spinach mixture that is layered in a pie dough and covered with cheese. The cheese that they call for is a soft white cheese called requeson ( with the emphasis on the o) or queso fresco. The book likens it to a smooth cottage cheese. I hope this helps. If you want the full recipe or have other questions, let me know.

          The spinach was not in an empanada, but a cheese similar to cottage cheese sounds right. Could you please post the recipe?

            shortbread crust
            1 kg spinach (500 g frozen) or chard
            2 eggs beaten
            s and p
            grated nutmeg
            1/2 small onion
            2 tbs oil
            200 g soft white cheese

            cook spinach until wilted. drain very well, pressing out excess water. Chop the spinach add to bowl. Add the eggs, s and p and nutmeg. Saute' the onion until soft add to the spinach. Roll out the dough. Spoon 1/2 spinach and cover with the cheese then top with other 1/2 spinach. Then top with the remaining pastry. Put in a medium oven until golden.
