I go with the fourth choice: The dry-aged.

A second- and enthusiastic- vote for Pat's short rib burger grind. I've had the original and the brisket burger grinds, but the short rib is my all-time fave. It has made going out for burgers pointless, I just can't do it because they never taste as good as the short rib burgers I can whip up at home. The seeded brioche hamburger buns from Fresh Direct are pretty good, too.
