I find that many restaurants just serve raw fish over plain white or sushi rice instead of seasoned rice. What do you consider the best chirashi sushi you have had either in Philly or the surrounding burbs?
Aki used to serve a unagi chirashi, is essence a unagidon, rice well seasoned and warm as was the eel.

I've never heard that term, but the rice at Fuji in Haddonfield is always exceptional; a cutabove the others by far. I'm going there Saturday for lunch, and will ask Matt Ito about it.
Sagami's is the best chirashi I've had in the area.
