The Black Hoof: New Chef in a month!

Heard from a friend, then went hunting for details. Found this:

So, in short Brandon Olsen is going travelling and Jesse Grasso in coming in.

I still <3 the hoof, so I am both dreading and anticipating how the new chef integrates and innovates in there.

    bao bei was easily one of my "best value" meals in Canada in the last couple of years. everything was spot on with flavour balance, a great mix of textures, service was friendly, drinks were great, dishes were a combination of fun riffs on asian classics and inventive ways of presenting familiar ingredients. can't wait to see what that experience lends to the Hoof's particular offerings.

      i loved brandon, he was always the one making the dishes that i adored at hoof. curious to see what travel will add to his delicious insights.

      jen agg's vision is strong enough that i'm very sure this will not be a troubled changeover.

        She's the reason why they lose so many Chefs. I feel sorry for the next guy!

            That quite possibly is true... but it can be said that she is the reason these chefs get the opportunity to make a name for themselves.

              ...but four head chefs in four years? I think the proof is in the pudding!

          Would someone be kind enough to breakdown the timeline of each chef at the BH? I have eaten there twice and was underwhelmed, but I believe both times were when the original chef was at the helm.

          Them bringing in a new chef would definitely push me to give them another shot.

              Head Chef, Chef De Cuisine, Sous Chef, Chartcutier, Cook. That's a serious brigade listing for a restaurant running on an electric stove for 5 days a week. I guess the Chef De Partie is the Dishwasher?
