Anything if note in...Waco?

Chowhounders--I am headed to Waco for a couple of days for work. Anything there I should try to hit? I'd go for pretty much anything of note, as I am going to be at a conference and anticipate eating a lot of bad conference food that I'd like to offset. Thanks!

The jambalaya at Buzzard Billy's is the best I've ever had. And if you go, try to get a table overlooking the Brazos.
