Cottage cheese pancakes
Just looking around, I found these:
Gotta say, they sound pretty tasty.... never had them!
What we call cottage cheese pancakes at my house is:
1 16 oz. carton of cottage cheese
7 tablespoons flour
Butter for frying
Separate the eggs
Mix the cottage cheese, yolks, and flour together well.
Beat the whites until they hold stiff peaks, fold into the yolk mixture carefully, gently.
Melt butter in frying pan or griddle, spoon the batter into the pan as you would pancakes. Let cook, turn once to cook the other side. They're like small souffles, puffy. You can also skip the egg white beating -- just mix whole eggs with the flour and cottage cheese, and have flat pancakes. They taste the same.
