I usually figure 3/4 pound per person (uncooked in the raw) for a main dish so I'd probably figure about six pounds (three small ones should hit that mark easily) and use only what I needed from the cooked squash. It stores beautifully under refrigeration if you have a bit left over.
It's a favorite in our house throughout the fall/winter season.
