Rendering duck fat before roasting

Hi everyone;

I am looking at roasting some duck breasts for a large-ish dinner party a la this recipe.

Does anyone have any thoughts on if I could score the breasts and render the fat out ahead of time? Maybe an hour or so before they go into the oven?
