freezing gazpacho...good idea?

Thinking about doing this to make the most of last tomato harvest. My baby loves gazpacho and am looking to freeze some for her. Does it taste ok defrosted?

The only draw back to freezing would be a recipe with cucumber, which does not freeze well.If so just leave the cucumber out until thaw & serve.

It should be fine. Most soups, casseroles, etc. freeze very well. In fact, many people make big batches for the sole purpose of freezing so they can be used through the Winter.

I have never done it but I imagine that it will be fine. I sure that there will be some loss of flavor but to have "Garden Fresh" gazpacho in January will probably trump that.
You will need to blend it after it thaws to re emulsify.
