tamales and ???

A friend just gave me a dozen meat tamales. What should I serve with them to have a nice complete meal?

    The nixtamalized corn and filling that comprises most tamales is a fairly complete meal. If you want a few options for sides just for contrast, consider something crunchy like a jicama and citrus slaw, maybe some cheese and rice bake that you can drizzle with salsa and a simple dessert.

        some salsa perhaps, depending on the filling, or some sort of sauce, but then I love sauce and it's not standard with tamales. refried beans--I prefer pinto. chile relleno, depending on how many tamales per person.

          I often serve tamales with red chile sauce, cheese, shredded lettuce and maybe tomato. After steaming I remove them from the corn husks, add chile sauce and cheese and pop under the broiler until the cheese melts. Then I serve them with lettuce, tomato and more sauce on the table. That makes a complete meal for me and we have it breakfast, lunch or dinner. I suppose you could add a fried egg on top (under the sauce and cheese) if you wanted.

            Serve with chili gravy, pinto beans, pico de gallo, and flour tortillas.

                Mexican Coleslaw, Shredded Cabbage, Cilantro, Green Chili, Salt and Lime Juice
                Frijoles De La Olla
                Watermelon,Cucumber and Radish Salad
                Roasted Winter Squash with Honey and Chipotle

                    I love BIG green salads. Tonight I did a nice "Mexican" style green salad: greens, tomato, julienned carrots, green onion, and corn. I made a salad dressing with red salsa and Mexican creme with diced Serrano peppers. It was perfect.
