To Cover or Not to Cover?

Making this recipe which does not say whether to cover or not. I assume not, but aren't roasts usually covered?

  1. No, Roasts are usually dry heat and uncovered. You want a deep caramelizing on the exterior of the roast.

    1. Yes, absolutely uncovered. Sounds simple, and delicious. Thanks for the recipe!

      1. Just my opinion, but if you follow that recipe as written your meat won't be rare like the poster suggests. - my guess is that it will be closer to well done than rare.

At 275 F for 2 hours, it will not be well done.
