One More....dried mushroom mix!

I have one more question I would like to ask my fellow chowhounders....................

I am trying to eat all the food in my cupboards to make room for fresh supplies. I have a box of portabella condensed mushroom soup from Trader Joe's, along with a bag of their dried wild mushroom mix.

Can anyone give me a good idea or recipe for using these items? The box of condensed soup is pretty small, and I am trying to eat what i already have in my kitchen to save money and not waste food.

Any advice would be great!

    I use the TJ dried mushrooms to make mushroom risotto. Rinse, soak in hot water until plump, and use.

      ooohhhh!!! sounds awesome! I never made risotto before so I would love to try that!

      Reconstituted dry mushrooms make very tasty pizza topping and go great in past dishes as well. They can also be ground and used as part of a dry rub for steaks or chops.

          A bit off topic, but I recently discovered a bag of dried mushrooms waaaaay in the back of my pantry. I've used them before after a year or two...but this bag has probably been there for five or six years. Is it still good?

          Why do you have to use it up? Both will keep for, like, ever.

          But if you're inclined to use'em, how about a cream pasta sauce incorporating both ingredients? Or maybe a white mushroom lasagna?

            I'm trying to eat all the food in my cupboard as we have ALOT! and lately we have been spending a fortune on groceries every week. We live in NYC so every penny we can save counts.
            I'm trying not to buy too much until we have eaten what we already have sitting around.
