Best "whole animal" book/cookbook?

Can you recommend the best book that illustrates whole animal butchery? Recipes are not important to me, but if they are included that's fine. I'm more interested in illustrations of breaking down whole animals.

    Are you looking for game or livestock butchery? I bought Fit for Table: A cook's guide to game preparation field to table by Mike Robinson for my husband. It has a step by step pictures.
