I've never thought of fondue as French, but Swiss rather and its Italian cousin, Bagna càuda. The Meelting Pot is the only fondue restaurant I can think of in Vegas.
And if you want the "best" French, that will be one of the ultra-high end places like Guy Savoy, Joël Robuchon, Bouchon, L'Atelier de Joël Robuchon, Le Cirque, etc.
Mon Ami Gabi is my favorite for everyday dining. Great food, reasonable and a nice setting.

The Las Vegas location is located on Charleston in Summerlin. I can't vouch for its quality.

Morels in the Palazzo has amazing cheese fondue. We had it with brunch for the first time this past spring after contemplating getting it a bunch of other times we've eaten there- now I can't wait to go back and have it again. I'm not positive that they serve it at lunch and\or dinner also - I think they do but probably best to call ahead just in case.
Everything else at Morels is consistently excellent too- French bistro food- also amazing cheese and charcuterie selections and great raw bar.
