ISO Ham Hocks not the fresh pork hocks
I haven't been able to find ham hocks recently; anybody know of any place around NDG/Westmount that still carries them? I have a hankering for simmered falling-off-the-bone ham hock with cabbage,potatoes, carrots and celery poached in the ham broth.
I ended up buying a smoked pork hock/schweinehaxen at Atlantique but haven't cooked it yet. It's not quite a ham hock like I used to have as a child, which was the actual nob end of a whole ham but I guess it'll do. The hock feels like the flesh is fairly raw rather than firm like an old-fashioned salted ham. Before you ask, we used to buy our hams from a local smoke house and the hams used to hang from beams in the rafters and we bought our bacon from there too. I guess I'll make it German or Austrian style.
