Good suggestions for a bite to eat on the road from Phoenix to Tucson

Good morning, we will be landing in Phoenix tomorrow evening and then hitting the road to Tucson. Coming from Boston, we'd love to get some good Mexican (especially my Texan husband). Any good recommendations for a place to stop that doesn't take us too far off our route? Thanks very much
