anyone know where to get Guanciale ?

Want to get some fresh Guanciale for making my own Carbonara.

    They usually have it at Oyama on Granville Island.

      I've seen it at Cioffi's as well the last couple of times I've been in (on the deli side).

        Poor detail here but a friend who is very keen on the high end charcuterie makers on East Hastings (name escapes me) mentioned they make it.

        Oyama has been my go-to from day one and had it in stock today. You have to buy the whole piece but it's under $10. and keeps for months in the fridge.

          I think you might be thinking of Moccia Urbani at 2276 E. Hastings. Their stuff is wonderful!

            Moccia has regular supply of Guanciale. I prefer it to Oyama's as it's heavier spiced and you don't have to skin it. About double the price of Oyama's.

              On a similar theme, where is the Refuel/Campagnolo charcuterie project at? Are they still making porky treats? (I assume no Guanciale or you would have said so.)

                Lots of porky treats and it's better than it's ever been. The Guanciale is delicious and is used properly in the carbonara at Roma. I'm a huge fan of the saucisson sec and bresaola as well.

                  You can buy The Cure's products at Les Amis du Fromage (The Cure is the name of the charcuterie room upstairs at Campagnolo). Not sure about guanciale in particular but definitely their sausages.
