Need To Thicken Up Leftover Potatoes

I'd love to whip up some mashed sweet potato psudo-pancakes. Found some recipes. Added an egg and some green onion and some cheese. They're still on the thin side so they're not really keeping a shape while they cook.

Any suggestions???

  1. Maybe chill the mixture first . Or chill, then form patty, and dust in flour before cooking.

    1. Just stir in a little bit of flour to thicken the batter.
