Best Sweet Potatoes?
I am trying to figure out how steak restaurants fix their baked sweet potatoes.....I order mine plain, and it doesn't appear to have been scraped out and mixed with anything, but they are sweeter than those I buy at the grocery store. Thanks for sharing your knowledge!

I think part of the secret is to let them bake for a good long while; they do seem to sweeten up more as time goes on. Home cooks often are tempted to treat them as if they're regular potatoes and pull them out as soon as they're tender enough to eat.
I like the garnet variety too.

Thanks! I normally bake them for about an hour or so. I don't usually put them in foil, but I have. You know, I do tend to eat them pretty soon after I take them out of the oven. I'll try that. WHere do you find the garnet variety? I'm in NC. Our state grows lots of sweet potatoes down in the eastern section. Maybe I can find some at the farmers market.
