braised short rib recipe question from a really lazy cook
so, in this recipe-- http://www.foodandwine.com/recipes/br... says to first brown the ribs in a skillet and then pull the out and then put the veggies in, cook them down, add the ingredients for the marinade and then pour over the ribs.
then they're supposed to sit overnight and then be transferred to a dutch oven and braised in the oven for a couple hours.
my question: can i brown the ribs WITH the veggies, then add the marinade ingredients and bring to a boil, let cool and then braise in the oven after refrigerating overnight?
It is difficult to get a good brown on the ribs with the veggies in there. They give off moisture and cook at a different rate than the meat so either the meat won't brown nicely or the veggies will burn. Probably only a ten minutes difference so I would follow the directions if you want a really flavorful dish.
