Left over Phyllo Dough

I just finished making a Baklava and I have most of a roll of Phyllo left. Can I refreeze it or will it keep in the fridge until I can turn it into Spanakopita next weekend?

    I refreeze phyllo all the time. the trick is to make sure that you tightly wrap it so that it can't dry out. Otherwise it will just crumble when you try to use it. Multiple layers of plastic wrap and then a freezer safe ziploc bag do the trick.

      Filo re-freezes with no problem
