Caffé dela via on Castelneau in front of the church (corner of Henri-Julien?) has changed their schedule. They are now open from 7 AM or maybe 7:30 AM. If you have car, close to little-Italy you have Olympico café on St-Viateur one street after St-Urbain to the west. Sickkkkkkkk cappucino for only 2,50$! They open at around 6:30 AM

We ended up stopping at Caffe Italia, which was not only opened, but already had some old Italian guys sitting there. Coffee was good. My wife was the one who went in and let's just say, those old men don't really make a young woman fell welcome. Probably not as bad later in the day when there are more customers.

re: sweettoothMTL
It should be open by 6:30 at the latest, especially on a Saturday morning in late summer when there will be so many people going to the market.
I think it's the best coffee in the city - but of course that is a combination of objectivity and having grown up going there all the time. The quality varies slightly depending on who the barista is, but on Saturday they usually have at least one more "senior" person working the bar. In any event, I don't think you can be disappointed by the coffee there.

I'll have to check on Caffè San Simeon, which is also open very early, but I don't remember whether it is open on Sundays; I think so. It has excellent coffee. When the weather is good, the "terrasse" is the old-fashioned kind - just some chairs and tables on the sidewalk in front of the place.
