Steakhouse for non-steak eater

Conventioning in Vegas in November and will be entertaining clients who are avowed carnivores. However, I gave up red meat back in February. Any suggestions that will satisfy everyone. Been to Carnevino a couple of times, loved it, but want to try someplace else. Thanks in advance and if this has already been discussed recently, just point me in the right direction.

Mastros inside Crystals at City Center has a wide variety of seafood, as well as my favourite steak in town.

SW Steakhouse at Wynn Las Vegas has a vegetarian and vegan menu as well as steaks. In fact, ever since Steve Wynn became a vegetarian, every restaurant at Wynn/Encore has a vegetarian and vegan menu.

Cut at Palazzo. This is the only steakhouse where the apps and non-beef entrees rival the steaks themselves, and the carnivores can have true Japanese wagyu.

A note about CUT: I just visited Las Vegas, and checked on CUT on September 29. I was told that the wagyu was A4, with a BMS of 6 -- pretty underwhelming for prices above $150 (IIRC, it was $185 for an 8 oz rib eye).
