Fresh tomato sauce allium-free?
Does anyone have suggestions for how to make a great sauce without garlic or onion or peppers? Can't have allium and can't stand peppers. I have a big box of tomatoes from the farmer's market that I want to cook up and freeze, and I'd love some suggestions. I'm thinking mushrooms, lots of herbs, balsamic vinegar (I stay away from red wine b/c it gives me migraines). What else? I'd like it to be thick and flavorful. Thanks!
You could try an onion-free soffrito of sorts, with just carrots and celery, chopped very finely in a food processor. You might also try adding fennel to that mix if you like it. Otherwise, mushrooms are good - you could try adding dry porcinis or porcini powder for a rich background flavor. A bit of chicken stock might contribute a nice background flavor as well. Just depends on what direction you want to go with it.
