Salad ideas (spinach or blend) for picky eaters attending bridal shower

I'm in need of salad ideas for a bridal shower. There's only going to be about 6 attending and they're all fairly picky eaters, which is difficult for me! They said spinach is ok, but no blue cheese, no seafood, no beets. Any ideas would be greatly appreciated!

The rest of the meal will consist of stuffed mushrooms and lasagna, plus a few other items that I'm not sure of yet.

    Spinach salad with craisins, toasted pecans, and thinly sliced fennel. Balsamic vinaigrette... Can be served on the side

      Thanks for the suggestions.... think I'll do a basic spinach salad and just put some of the above questionable ingredients on the side. That should satisfy everyone.

      The bride-to-be loves blue cheese as do I, so that will be on the side too.

      A simple salad of thoroughly washed baby spinach, freshly cooked and drained bacon bits, chopped hard boiled eggs, chopped mushrooms and tossed with a vinaigrette dressing made from a combination of red wine vinegar, a bit of bacon grease and crushed garlic if it's a shower you may want to omit the garlic) that's been heated and whisked just before drizzling over the salads and finished with a sprinkle of Parmesan cheese makes a nice accompaniment for any lunch or buffet.

        This was my first thought, too, even if it doesn't fit the rest of the menu. It's so popular with people who are picky. In case the OP needs proportions, something like this:

        traditional spinach with egg and mushroom or fancy it up with figs an goat cheese and wanuts.
