Tips for making homemade goose sausage?
Thought I would seek out any information/tips of the trade before trying this with my mom within the next bit. A nice man gave the family 10 pounds of goose breast meat and my mom and I instantly thought of making sausages, and then smoking them.
I've found this link to work off on : http://honest-food.net/2007/12/21/smo... and I like the ideal of using rosemary and garlic as the main flavoring, but are there other spices that would really make it something special?
