hey all,

I recently got a sous vide supreme and vacuum sealed some raw beets and carrots for use in the SVS. I was going out of town for a bit, so without thinking I threw both packets in the freezer. I know, duh, you're not supposed to freeze raw vegetables because it changes the texture. however, I don't want to waste them. I put them in the fridge to thaw and was planning on trying them out in the SVS tonight. do you think they will still taste halfway decent?

thanks!

You blanch veggies before freezing to stop enzymatic action, which does affect texture. If they haven't been in the freezer for too long, they will probably taste just fine. Might want to use them for soup or casseroles, where the texture won't be a problem.

they've been in the freezer for about 5 days - is that "too long"?
