According to Eater Vegas, true Japanese Wagyu will be back at CUT for the first time in years -- see http://vegas.eater.com/archives/2012/... . Now we can argue about...I mean discuss...wagyu all over again!
A note about CUT: I just visited Las Vegas, and checked on CUT on September 29. I was told that the wagyu was A4, with a BMS of 6 -- pretty underwhelming for prices above $150 (IIRC, it was $185 for an 8 oz rib eye).
