Low Sodium Tomato Soup recipe
My husband was put on a low sodium diet and his favorite lunch had been canned tomato soup. All were way too salty so I devised an easy, satisfying recipe that he could cook for himself. I'm happy to share it.
1 28 oz can tomato puree
1 12-14 oz can of lo sodium chicken broth (1 1/2 cups of homemade no salt added chicken broth is better)
a shake of garlic powder
a shake of onion powder
For the gourmet version, add a couple of basil leaves.
Simmer first 4 ingredients, all together for a few minutes. Garnish with basil
If you live where there is a Trader Joe's, look for their low sodium organic marinara sauce, in a jar. It is very tomato-y and has only 30 mgm sodium per half-cup, compared witrh 400-700 mgm in name brands. You can do hundreds of things with it. They also have a good low-sodium chicken broth in cartons.
