Chicken Veggie Rustica
1 cup cooked, chopped chicken
2 cups mixed vegetables ( I used a bag of the Bird's eye Steamer vegetables, but 1 can of mixed vegetables would work just as well)
1 pkg Turkey(or Chicken) gravy mix
1/2 cup mayonnaise
1/2 cup sour cream
1 cup shredded sharp cheddar cheese
1 tube of canned biscuits
Preheat oven 325 degrees. I used a 10 inch round baking pan sprayed with Pam.
cook the veggies in the microwave according to pkg. If you use the canned ones, just heat them unti hot and drain. Mix with the chicken and gravy mix. Set aside.
Open the can of biscuits..smoosh them until they are flat. Line your pan with the biscuits, making sure they touch each other. You will have some gaps but that is no biggie.
In a small bowl, mix the mayo, sour cream and half the cheese. Spread over the chicken/veggies mixture, then sprinkle with the rest of the cheese.
Bake for 30-35 mins, let cool for about 15 mins or so. Slice and serve.
