Pre-rolled at Bertucci's
Every once in a while l go to a Bertucci's. While not super, most of the time it is not bad, comfortable, and easy. Last night went to a location that was new to me and saw something l had not noticed at the other branches l frequent., Ordered a pizza and thought crust was a more cardboard-like than usual. left most of crust.
We were there for early dinner and when we left, l saw about 75 doughs rolled out in pizza pans drying out by the minute stacked up near the pizza oven. The two questions l have are:
Was the pizza crust more cardboardy because of pre-rolling, sort of as oysters shucked and left on ice get watery, ?
Do all Bertucci's, and/or other places do this ? Again not a few rolled out but zillions.
When a pizza crust is pre rolled and left exposed to the air the dough will get hard and crunchy and wont rise properly. A few minutes isnt a big deal, but over an hour and you are using an inferior product. Most places that pr -stretch their dough will keep it covered and often will pre sauce to keep it from drying out.
