Celebratory meal - musing over scallops
Leaving on a 2 week girls trip to HI on Wednesday and want to treat the hubs to a home-cooked meal tonight. So I'm pondering on preparations for scallops. I have on hand champagne, saffron, and truffle oil. Am considering risotto, or a chilled and pureed corn soup as a base for the seared scallops. What are your favorite pairings? TIA.
