How to Cook Thai Eggplant [Split from Minneapolis-St. Paul Board]

One of the vendors at the Farmers Market told me to tell everyone how to cook the thai eggplant since no one is buying it. When I bought a basket, he said no one buys and I should tell everyone how to cook them. They are really easy to cook and delicious for an authentic green thai curry. I just pop them in my curry as it simmers. You want to use them quick because they will get dark/seedy like regular Italian eggplant. Here's some links with pics of them:
