Help! I made a mistake and cooked my pastry a day early. What to do?
I'm supposed to be making fig and frangipane tarts for tomorrow. I got my dates wrong and started pre-baking the tarts today. So I have 3 pre-baked tart shells. Will they keep until tomorrow? If so, should I wrap them, freeze them, room temperature? Or am I better off finishing off the tarts today and hoping them keep ok till tomorrow?

Wrap them up and either freeze or leave at room temperature. Don't finish them today. When you are ready to finish the tarts, refresh the pastry in the oven without letting it cook further. I don't know where you are, but the humidity of summer can ruin pastry by making it soggy. Another turn through the oven should fix that. Let cool, and fill as usual. They will be fine.
