Rice paper - other uses?

Hi everyone,
I have loads of rice paper and was wondering if anyone has creative ideas for, preferably cold, dishes that use rice paper other than the obvious rolls. I've used them for spring rolls, Vietnamese fresh summer rolls, loaded them with many different sandwich fillings and layered them in casseroles and lasagne-type dishes. I'm looking for something new -- any suggestions that are out of the ordinary?

Nutella and banana or Nutella and sliced strawberries. Fill, roll & fry. I serve them kinda on the thin side as dessert cigars with ice cream.

Soak, cut them in strips, and stir fry them just like noodles.
