Guanciale in South Jersey

Anyone know anyplace in South Jersey that sell Guanciale? Have had no luck finding a local purveyor.

      Can you travel up to central Jersey (though lots of folks consider Monmouth County to be south Jersey)? I have seen guanciale in Sickles and Ferrucci's, both Little Silver, and Mossutto's in Wall.

      Can you substitute pancetta?

        I could certainly substitute pancetta, but I would much prefer to find guanciale. I am going to the farmers market this weekend in Phila to find PorcSalt, their website lists guanciale as one of their products.

        If you can drive into Philadelphia, the Headhouse Farmers market Porc Salt makes some wonderful Guanciale. Several butchers in the Italian market... sure you can get it there.

          Try Severinos in Westmont. Pretty sure I have gotten it there.
