They do take walk ins; on Tuesday and Wednesdays the waits often are short (or possibly no wait). Thursdays and especially Fridays and Saturdays are very busy. The earlier you arrive (they open at 6:00pm) the shorter the wait usually as well. They do take reservations on short notice - so you can try e-mailing them morning of the evening you want to go to try and make a reservation. They are closed Sundays and Mondays.

Yes, they will always try to accommodate. You might end up at a standing table by the kitchen but that's kind of fun, since you can see all the action inside. Don't give up!
Right now they also have an outdoor patio, too.
I've heard that prime dinner time (8pm) is slowest, if that helps.
