Paris: Getting a reservation at Chez L'ami Jean and L'agape Substance

Im off to paris in 3 weeks and I've been trying to score some reservations the last week. I imagine most of them are fully booked since we're booking on short notice. I managed to get a reservation at L'arpege for one day, but I haven't been able to get in contact with the other restaurants. Some of them are closed for the summer, but will open the week we will be there.

So does anybody know at what time of the day to call theese restaurants, or just have any general advice for scoring a reservation? Theese are some of the restaurants of interest!

Most return on the first opening day after Sept 1, thus imagine all would reopen @ Sept. 4-5, but l am wrong a lot.

Ok.. well I have excluded restaurants that open after we leave from the list.. I think all of theese will be open when we're there, information i found out via their answering machines and internet..
