Brewing beer, curing meat, or making cheese?

Looking for a cool hang near the cruise terminal in Philipsburg, St. Maarten

It will be our first stop after 2 days at sea, so we are looking forward to just walking around and window shopping. Where's the best place to kick back for some small plates and good beer/wine/cocktails?

I was going to suggest those same 2 places, Blue Bitch and The Greenhouse.

It's been awhile since I was there, but Taloula Mango's(also called Blue Bitch) along the boardwalk is a good stop. Indigo Beach is fine too. 5-10 minute leisurely stroll from the dock. Sheika's Bistro off Front street has great local food too. For some people watching, off Cyrus Wathyer Square is the Barefoot. Sit up stairs and have the Curry Shrimp, just be patient with slow service. Lots of crusiers hit the Greenhouse Bar/Restaurant at the head of the pier area, next to the 12 Meter Racing boathouse. If you're into doing a beach, head for Dawn Beach..good water, good snorkel, and Mr. Busby's Bar! Of course watching the planes land at Maho and a drink at the Sunset Bar is typical crusier haunt. But that's a cab ride too.
