frozen crockpot meals

It's really too hot to cook, also I'm very busy lately and super lazy to boot. I want to just make a lump of meals with VERY limited prep and throw them in the freezer to cook in the crockpot later.

I've got some basic combos: meat with various sauce-andp-veggie combos like salsa/chicken/corn/black beans, bbq pork, veg beef stew, etc. Looking for some more inspiration beyond what you normally find on mommy blogs, etc. Anyone have anything quick and easy and different. What about a mock cassoulet or coq au vin...?

Also, does anyone freeze stock/sauces in ice cubes and throw them in with a bag of ingredients to freeze?
