Best pancakes in Maine
Looking for the best pancakes in Maine - preferably near the Mid Coast, but I'm willing to venture inland or Down East for a really outstanding version. The southern part of the coast closer to NH is fine, too, since I have to pass through that region anyway.
I'm not seeking anything fancy or exotic: just simple, classic breakfast pancakes with at least somewhat crispy edges and a fluffy, non-spongy interior. Preferably not made with a generic powder mix.
I know this must sound like an odd request, since pancakes are served everywhere. But you'd be surprised how tough it is to find a truly top-notch rendition of such an "ordinary" dish where I live - a large, diverse, cosmopolitan city where almost any cuisine from around the world is available, but down-home traditional American food isn't always up to par.
Any style of eatery is fine: cafes, roadside diners, bed & breakfast inns, etc.

BTW, I was doing some research and read that The Castine Inn (a B&B in Castine) serves very good food *and* allows non-guests to walk in and have breakfast for $10/person.
Have any of you guys ever tried the breakfast at this place? How were the pancakes and other dishes? I've heard great things about the town of Castine in general, but if the breakfast - especially the pancakes - at The Castine Inn are really outstanding, then the town and the inn become must-visit spots for me.

Thanks to everyone for the recommendations thus far. Home Kitchen Cafe keeps getting mentioned in this forum for a number of their breakfast and lunch dishes, so I think I'll definitely be checking it out. The other places sound interesting, too, so I'll look into those as well.
