CANNING TOMATOES BY OVEN PROCESS?

Hey all you Chowhounds have you ever heard of processing tomatoes by peeling them and putting them in a Ball or Mason jar then not letting the jars touch put in a 250 degree oven for one hour.Turn oven off but don't open oven door until the next morning.Recently heard of this but have never tried it and before I did would like to hear from someone who has and the results.THANKS!

    I've heard of it. The center for food preservation says it's not safe.

      Yep to both. I've heard of it, NCHFP says it not safe. Would I do it, nope. Not worth the risk, especially since tomatoes are on the borderline of low acid now days.

      I'm with you on wanting to hear from anyone who has used this technique. Thinking you could do a lot more jars at one time this way?!?
