Cherry purée

A couple of days ago, I had lunch at the National Gallery's Garden Café Catalonia, where the current menu was created by Jose Andres. One of the stand-outs was the cold cherry and tomato soup.

The recipe is available at the NGA's website. It calls for 2 cups of cherry purée.

Is this sold anywhere in DC? I've found it online, but shipping costs a ridiculously high amount.

There was a cherry crop failure in Michigan and prices are going sky high.

Buy cherries, pit them and then puree them yourself

          Yeah, thought of that.

It works for now, but cherries are almost out of season, and I'll want to make the soup later in the year.

Puree the cherries then freeze the puree in a plastic container.
