Edgeware Electric Sharpener? Reviews / Experience?
Looking at the Edgeware Pro Edge Elite
instead of the Chef's Choice 110. Edgeware talks about how it uses 'interlocking' stones which dont' remove as much material.
Anybody know anything about these? Good/bad comments. I know that a manual sharpener is better but I just don't take the time to use the one I have (spyderco type) and just end up using dull knives. At least this way I'll have sharp knives more often, and my knives aren't big $$ so I'm not too worried about wear.
So just looking for comments from folks that can appreciate the application for electric sharpeners.
Haven't tried that particular product, don't know anyone who has, and haven't seen any credible reviews.
Only input I can really add is that I looked at the more in-depth product description on their site, and I don't see any reason to think it would perform much differently than the popular Chefs Choice 2 stage electric sharpeners. Whether the sharpening abrasive in a device like this is diamond or ceramic doesn't matter anywhere near as much as basics like the grit size of the abrasive, the angle it's set at, and the speed of the motor.
I am not opposed to electric sharpeners - like any other kind of sharpener, they have advantages and disadvantages. Note that if you favor knives made of especially hard steel (usually but not always Japanese knives), an electric sharpener is more problematic than usual. They're easy to learn to use, and quickly create reasonably sharp (though not super sharp) edges as long as your knife is made reasonably well. They can accentuate the problems caused by full length bolsters and can be more aggressive than other kinds of sharpeners.

Last of all, while the Spyderco Sharpmaker is very slow to sharpen a completely dull knife, it is fairly quick for touching up a knife that is just a tiny bit dull, and produces fairly nice results. You might find that if you sharpen your dull knives on an electric sharpener (or take em to a decent professional), the Sharpener you already have is useful for maintaining the edge as long as you don't let it get too dull.
Hi, I haven’t used that one and in general am not a fan of electric sharpeners. But the chef choice #130 (recommended by America Test Kitchen) works well. It produces a pretty decent working edge and doesn’t chew up the blade as badly as others.
