yes, Essex Street Market has it all! i had checked there and saw every other cheese besides that one...it was hiding! Thanks everyone!

I am pretty sure you can get cotija cheese at Whole Foods on Bowery, otherwise you can definitely get it at the Essex Market a few blocks away. There is also a patch of mercados along Lexington off 103rd where I buy Mexican ingredients, including cheese.
